Sidra is Spanish cider and Spanish for cider. A wild yeast fermented beverage that goes back millennia to before Roman times. Traditional Sidra is earthy, tart and sour – and unlike American cider, has no bubbles or sugar (closer to sour beer than cider in many respects). The new wave of Spanish Sidra however, marries the old with the new creating a white wine-like offerings similar to Cava, Prosecco, and Champagne, while still sporting the refreshing notes of its heritage.
